THE BUZZ BEHIND GREENWOOD HONEY CO.

Hi, we’re Steven and Claire from Greenwood Honey Company! We look forward to taking you on a journey into the fascinating world of honey bees and exploring a fun, educational experience of the complexity of tasting honey at the Shed at Patina Meadow. But before we jump into that, we wanted to tell you a bit about us!

The idea for Greenwood Honey Co. began with our shared love for nature. As we traveled, immersing ourselves in different landscapes, we became more aware of pollinators' critical role in maintaining these ecosystems. This spearheaded our urge to spread that awareness and encourage people

to reconnect with the environment on this path we share in life.

We started with bees. We were motivated by the purity and simplicity of the hive mentality and wanted to create that of our own. Greenwood Honey Co. began on our street to supply our eggs and honey to our neighbors. We wanted to build a community hive that could stand strong in a time of distrust and movement away from face-to-face gatherings. This blossomed into holding concerts on our front lawn, with neighbors joining together to share music they had written, flowers they had grown, and even paintings for all to enjoy together. This gathering has now evolved into an annual fall festival.

As we grew and continued this mentality, so did our bees and our love of sharing honey, watching their behavior, and how they operated inside their little bee community.

We wanted to share the best quality honey possible and help educate others on how we can do better as a human race. If we can preserve the land and pollinators that we love while learning to nourish our bodies with the cleanest possible sources, we will ultimately respect and understand nature—and ourselves—with a deeper connection.

Every beehive’s honey production has a story. A story of millions of flowers visited to create the wildly different flavors this superfood offers. To the bees, it’s the necessary ingredient to stay alive, but from our view, this miraculous food is an art form, and we believe every hive should be highlighted for that. While ensuring the bees retain enough honey to thrive, we harvest the excess to share!

Each hive collects pollen and nectar in different ratios depending on what they find, resulting in slightly different tastes, even though the hives are right next to each other. It’s like asking five chefs to prepare the same dish—the results, though similar, will be uniquely different.

In this class, we will take you on a trip around the nation, tasting honey from many regions. Our goal is to give you an immersive experience of honey while teaching you how to taste, smell, and talk about the complex notes of this truly miraculous gift from these incredibly intellectual little creatures, honey bees.

This class will provide you with an understanding of the different notes in honey that come from a variety of nectar sources. We hope that you will get just as excited as we are about providing these little chefs with an array of flowering ingredients by planting a pollinator garden so they can have a diverse palate of nutrients to create their art, their food, and our food, as we enjoy this beautiful delicacy and medicinal superfood.
